Wurstsalat with Jarlsberg and Smoked Gouda

 I had been craving Wurstsalat for a minute and one of our new co workers happened to over slice a pound of a imported bologna without checking with the customer as to how they would like the thickness.  Mortadella is typically sliced very thin and he went the 1/3 inch route.   Needless to say we were stuck with a pound of too thick slices so bought half along with some thick sliced Krackauer.  


A Wurstsalat or Fleischsalat is a type of German meat salad.  I used to think Wurstsalat was vinegar based and Fleischsalat is mayo based but also read that Northern German's call it Wurstsalat and Southern call it Fleischsalat....   I'll stick with my first belief but this is not a life or death question either.  End of day do you prefer a vinegar based or mayo based salad?   And a personal choice is a good inexpensive Swiss like Jarlsberg or Emmentaler and definitely a Smoked Gouda play well with deli meats in this recipe.  Jarlsberg is a nice mild but nutty Swiss and Smoked Gouda stands out but still that chess player at the party.


My recipe is based on the fact will have some to snack on for a few days as keeps well in the fridge for up to three days.   A total of 2/3 to 3/4 pound thick sliced German or whatever deli meats you prefer sliced into strips. 
  • Same with your preferred cheeses but about .25 lbs of each thick sliced into strips.  Purple or sweet onion, one medium or less if not a onion fan.  
  • German or whatever crisp pickles you like, about three chopped.  Reserve about half a cup of the pickle juice.  
  • German mustard, or seedy Dijon mustard.  
  • .25 cup of dill.   
  • Oil, (Sunflower, Olive, or Vegetable)
  • Salt and Cracked Pepper.  
  • Four boiled eggs for garnish.
  • Favorite bread or crackers to eat with.
  1. Mix your sliced meats, cheese and pickles lightly separating a bit.
  2. Mix the pickle juice, dill, and drizzle in oil to your liking as well the German or Seedy mustard to your taste to make a vinegar based dressing of sorts.  
  3. Add freshly cracked pepper and a splash of salt until you mix and text and then add more of what you feel you would like to your taste.  
  4. Serve with your favorite bread or crackers or even over lettuce garnished with boiled egg slices.
