Creamy Havarti Cheesy Pickle Rolls - Hat's off to the 'The Toasted Frog' in North Dakota


I have never been to North Dakota, but learned of this appetizer via 'Girl Meets Farm' star Molly Yeh!  She is this adorable bubbly blogger and cookbook author.  Award winning but hey, love her recipes overall.  She lives out there on the Minnesota and N.Dakota border, and apparently this is a menu item on 'The Toasted Frog's' menu in N.Dakota she made for some visiting blogger friends to her farm!  

I would have never dreamed up this combination but it is a big hit!  You will need:
  • Pickle spears, drained and patted dry on paper towels.
  • Slices of Havarti cheese, as many of how many pickles you would like to make.
  • Egg Roll Wrappers
  • High heat frying oil such as Canola
  • Ranch dressing
  • Sriracha
  1. Wrap each pickle spear with a slice of Havarti.  Then roll in your egg roll wrapper, using a little water on your fingertips to seal the edges and set aside.  I noticed my pickle spears were really long and needed two egg roll wrappers to make sure is was fully wrapped.  Assess that as you may want to halve them and then roll.
  2. Heat a couple of inches of oil in a frying pan until starts to slowly bubble.  Not necessarily a non stick as the high heat of the oil will ruin it.  
  3. As the oil is heating mix your ranch dressing with however much Sriracha you would like to your heat level taste.  
  4. Fry the pickle rolls about two minutes on each side until golden and place on a plate lined with paper towel or a wire rack to drain.  Whatever you have in your kitchen always works!
Slice these at an angle so it's like a spoon for your 'Srirancha'.  And these are all 'The Toasted Frog's' wording and nothing but the Frog's!!
I was pleasantly surprised how good they were with the flavor combinations would have never thought of.  And just because,  may have to make a trek to N.Dakota one day!
