San Francisco Crab Melt meets Mystic Cheese CO. "SEA CHANGE" cheese.


I was so excited when we started carrying cheese's by Mystic Cheese Co. out of Connecticut.  Our offerings are usually all the 'greatest hits' from around the world, the North West, Vermont and that's it!  Sure it's over 200 cheeses but having Mystic Cheese Co. offerings was a treat from the norm.  And the fact that this company has some of the most cute whimsical marketing and packaging have seen in a long time.  


Mystic Cheese Co. does supply a 'sell sheet' on their website and it's fabulous in words.  There are cheese and Cheese makers notes.  

The Tasting Notes are fabulous in fun description and knew was going to pair 'Sea Change' with a San Francisco fave sandwich!  The Crab Melt San Francisco's pier eatery's made as much a food staple as Sourdough, salami and wine!

Recipe is simple.   
  • Two slices of sourdough bread for each person.
  • Softened butter or a cooking spray.
  • Your favorite cheese which we will use "Sea Change" for this one.
  • Fresh picked dungenous crab or whatever crab meat is native to your part of the world.  
  1. Toast the sourdough bread.
  2. Layer pats or slices of whatever cheese you like on the top half or as I did a bit on both halves.
  3. Pile on your fresh picked crab meat to your liking.  I was very generous with our crab melts.  
  4. Then either use a pan or panini grill, whichever you have.  
  5. Either slightly butter the top of the sandwich and place that side down first then butter the other side and flip.   Or as I used a butter cooking spray to the top and bottom of my panini grill and lightly pressed just to get the cheese woken up warm to almost melting out.  I did not want a over pressed mushy melt which would ruin the integrity of the delicious crab and delicious "Sea Change".  

Side salad of tomato, purple onion, oregano, oil, red wine vinegar and salt as a side to help cut the richness of this decadent crab melt!  Remember life is too short to eat badly!
